The Holy Donut

Mashed Potatoes in a donut? Sounds crazy….until you eat it. Potatoes are the holy crop of Maine, so why not try them with the holy breakfast of America? The Portland, Maine bakery takes unbleached flour, organic sugar, buttermilk, eggs, and the crazy idea of Maine potatoes to produce this tasty treat.
Seeing them all laid out on the racks, I can help but like the look of them. They’re flatter than most. I quickly ordered the Ginger Glazed Sweet Potato, the Dark Chocolate Coconut, and the Sin-a-Bun and proceeded to take an open table. At first bite, I had a hard time describing them since they were quite different.
Each of them were pretty dense and chewier than most donuts. The addition of the potato in the dough made it seem like a mix of a cake and a yeast donut. I especially liked the Ginger Glazed sweet Potato donut, since the potato donuts were dryer than the sweet potato donut. The toppings were excellent with the toasted coconut on the one and the cinnamon glaze on the other.
They didn’t have it available the day I was there, but I’ve read that once and a while owner and chef Leigh Kellis will fry up a lobster doughnut. To me, that trumps a maple bacon donut any day in the savory category.
